The Top Sweet Potato Recipes of the Famed Tater Day Celebration

At the heart of the Tater Day celebration is the sweet potato in particular farmers harvested sweet potatoes in plentitude and then sold them around the first of April. This celebration includes a carnival, a parade, plenty of concession stands, a flea market and sweet potatoes. Sweet potatoes are usually around the court square of the county seat which would be Benton in Marshall County, KY. Sweet potato ice cream, sweet potato mashed potatoes, sweet potato cookies and others. Afterwards and all week long don't be surprised if the ladies make 'Sweet 'tater Pie" at home.

  1. Sweet Potato Pie

    Well before health fanatics praised the benefits of yams or sweet potatoes women were feeding their families sweet potatoes, as a vegetable and as a dessert, even for breakfast. Sweet Potato Pie is a candy like pie, something like Pecan Pie and something like toffee candy. It is amazing. Making a Sweet Potato Pie requires a single flaky traditional pie crust shell which you can make yourself or you can buy a frozen shell at the nearest grocery market. For the filling you should, in a large bowl with a wooden spoon, beat two large eggs. Melt a stick of margarine or butter. After the eggs are beaten and the butter or margarine are melted you should mix these two ingredients together with 1 1/2 cups of granulated sugar and 1/2 -1 Tb. of vanilla extract mixing thoroughly. Pour this into the pie crust and bake for about 55 minutes in a moderate oven. Remove from the oven. Store leftovers in the refrigerator.

  2. Sweet Potato Ice Cream

    Sweet Potato Ice Cream was first whipped up locally by some of the men. It is an exciting treat that has extreme health benefits as well. Sweet potatoes are loaded with the Vitamin A, an anti-oxident, especially when it is derived from plant sources, plus milk products for vitamin D and calcium. To make the ice cream you need an ice cream maker of some kind, manual or electric, 2.5 cups of cream, 1 cup of regualr milk, 5 egg yolks, 3/4 cup of dark brown sugar, 1 cup of sweet potato puree and nutmeg and cinnamon to taste. Heat the milks until very hot in a large sauce pot. Whisk the egg yolks thoroughly and then add to the hot milk in the pot. Leave this on the stove and with the heat still on continue to cook until it will coat the back of a wooden spoon. Remove from the stove and stir in the pumpkin puree and spice. Chill. After it is chilled put in the ice cream maker according to the directions for that ice cream maker. There will be your ice cream staring back at you when you open the container on your ice cream maker.

  3. Sweet Potato Cookies

    Sweet Potato Cookies are a flavorful treat that is good for you.

     1.25 cups plain flour

    1.5 tsp. baking soda

    1.5 tsp. baking powder

    0.5 tsp. salt

    .025 tsp. nutmeg

    8 Tb. margarine of butter

    3/4 cup brown sugar

    1 cup mashed sweet potatoes

    1 large egg

    optional 0.5 cup chopped pecans

    Cream margarine or butter with the sugar, egg, sweet potato and vanilla extract, combine the flour, baking soda, baking powder and salt in a second bowl. After this is well combined dump it in to the bowl with the wet ingredients and stir this mixture until well combined. Stir in the pecans is you are using them. Drop the cookies onto a cookie sheet and press down with a fork or a glass and bake in 375° for twelve to fifteen minutes. 

  4. Mashed Sweet Potatoes

    Sweet Potato french fries have swept the country and a couple of other countries and you can buy them at the local grocery in the frozen food section any time, but, have you tried mashed sweet potatoes? Take 6 sweet potatoes and add them to a pot of boiling wate, lower the heat to medium and simmer 20-30  minutes until tender. Remove from heat and add 1/2 cup of butter and 3/4 cup of milk while beating with an electric or rotary beater. You can season them with 1/3 cup of maple syrup, salt and pepper to taste.

Sweet Potato casserole is not on this list as it is more of a holiday dish then a Tater Day treat. The best sweet potato item on this list is the Sweet Potato pie. It is simple to pop it into the oven and go do something else whlle it bakes, while the other, even though delicious, choices are more time consuming to prepare.
