Best Quick, Easy, Handed Down Recipies

I've been cooking for my family for 31 years and have collected quite a few excellent hand me down recipes.  These are some of the tastiest and easiest I have.  I hope you enjoy them as much as my family has.

  1. No Bake Peanut Butter Fudge Bars



    Recipe makes 12 bars.



    2 Cups Sugar

    1/4 Cup Cocoa Powder

    1/2 Cup Evaporated Milk

    1/2 Cup Butter Melted

    2 1/2 Cups Quick Oats

    1/2 Cup Peanut Butter

    2 Tablespoons Vanilla Extract



    Spray a 9" X 9" baking tin with cooking spray.  Combine sugar, cocoa,

    milk and butter in a saucepan.  Bring mixture to a boil.  stop stirring

    after mixture comes to a boil.  Let boil for 2 minutes.


    Remove mixture from heat.  Stir in oats, peanut butter, and vanilla; mix

    well.  Turn into the prepared 9" X 9" pan and store in refrigerator.






    These are so quick and easy that they're one you'll want to add to your Christmas baking list.  Really scrumptious and chewy.  The kids will love these!

  2. Amish Breakfast Bake

    This recipe is so simple you'll whip it up in a jiffy.  Especially nice for a quick delicious morning breakfast.   Just mix all ingredients and bake.  It's really great.  I fix this one when we go to a resort on fishing vacations.


    Makes a 13" X 9" Casserole


    1lb. Sliced Bacon Diced

    1 Sweet Onion Chopped

    4 Cups Shredded, Thawed, Hash Brown Potatoes

    9 Eggs Slightly Beaten

    2 Cups Shredded Cheddar Cheese

    1 1/2 Cups Small Curd Cottage Cheese


    Preheat oven to 350 degrees F. (175 C.)  Grease a 9" X 13" baking pan.

    Heat a skillet over medium-high heat.  Cook and stir onion and bacon 

    until bacon is evenly browned.  Drain.  Transfer bacon and onion to a 

    large bowl.  Stir in potatoes, eggs, cheddar cheese, cottage cheese,

    and Swiss cheese.   Pour mixture into prepared baking dish.


    Bake in preheated oven until eggs are set and cheese is melted.  About

    45-50 minutes.   Enjoy!





  3. Best Scalloped Corn

    This can be made any old time.  It's quick, easy, and tastes great.  




    1 Can Creamed Corn

    1 Can Whole Kernel Corn

    1 8 Oz. Container Sour Cream

    2 Eggs

    1/2 Cup Butter

    2 Tablespoons White Sugar

    1 (8.5 oz.) Package Corn Muffin Mix



    Preheat oven to 350 degrees F (175 C.)  Grease a 9" X 13" baking pan.

    Mix together corn, sour cream, eggs, butter, and sugar.  Mix in muffin 

    mix. Pour into prepared baking dish.   Bake 35-40 minutes or until knife 

    inserted into center comes out clean.  Really good side dish.
